Description
Lemon Curd is a smooth and creamy tangy spread made from lemons or lemon juice, sugar, eggs and butter and has an almost custard like consistency. It is most often used as a topping or filing for desserts and cakes. It combines the tartness of fresh lemons, with the richness of butter and eggs resulting in a silky, thick and creamy texture. Unlike jam or preserves, lemon curd does not need pectin to thicken, instead the eggs thicken the mixture as it is cooked giving it the custard consistency, while the butter adds smoothness and a richness to balance out the citrus flavour.
